Monosodium glutamate
consumption reduces the renal excretion of trimethylamine N-oxide and the
abundance of Akkermansia muciniphila in the gut - Biochem Biophys Res Commun.
2022 Sep 14 - "We previously demonstrated that
monosodium glutamate (MSG) consumption increases trimethylamine (TMA) level in
the renal tissue as well as dimethylamine and methylamine levels in urine of
rats, suggesting the effects of MSG on humans. To better define the findings, we
investigated whether MSG consumption alters serum trimethylamine N-oxide (TMAO)
level, and as a consequence, induces kidney injury in the rat model ... In
conclusions, our findings suggested that prolonged high dose MSG consumption may
cause TMAO accumulation in the blood via reduction of renal excretion associated
with acute kidney injury"

A Test of Dietary
Monosodium Glutamate Developmental Neurotoxicity in Rats: A Reappraisal -
Ann Nutr Metab. 2018;73 Suppl 5:36-42 - "In 1979, we tested dietary monosodium
glutamate (MSG) for developmental neurotoxicity in rats. The study was recently
cited for establishing a No Observable Adverse Effect Level (NOAEL) for MSG as a
food additive resulting in a change in the acceptable daily intake (ADI) ...
Thus, it can be concluded, as was done in 1979 and by the U.S. Food and Drug
Administration who sponsored the study, that there is no evidence in these data
that dietary MSG is developmentally neurotoxic, hence, the study provides no
basis for the establishment of a NOAEL and changing the ADI for dietary MSG" -

Effect of monosodium
L-glutamate (umami substance) on cognitive function in people with dementia
- Eur J Clin Nutr. 2018 Oct 22 - "This study assessed the effect of continuous
ingestion of monosodium L-glutamate (MSG) on cognitive function and dietary
score in dementia patients ... We performed physical examination, cognitive
symptom tests (the Touch Panel-type Dementia Assessment Scale (TDAS) and Gottfries-Bråne-Steen Scale (GBSS)), palatability and behaviour questionnaires,
and blood tests before and after the intervention and after the follow-up period
... There were no significant differences in the TDAS and GBSS total scores
between the groups before and after the intervention. However, regarding the
TDAS sub-items, "the accuracy of the order of a process" did not deteriorate in
the MSG group compared with that observed in the Control group (p < 0.05). At
the follow-up assessment, the TDAS total scores in the MSG group showed
significant improvement compared with those reported in the Control group"

Why Americans still avoid MSG, even though its ‘health effects’ have been
debunked - Washington Post, 3/20/18 - "Unfortunately, when it comes to MSG,
there’s a great deal of evidence that consumer fears have been misplaced ... A
chemical variant of glutamate -- a substance that occurs naturally in high-umami
foods, such as Parmesan cheese, walnuts, soy sauce and tomatoes -- monosodium
glutamate has been widely eaten since the early 20th century, when a Japanese
scientist first distilled it from seaweed ... As MSG’s defenders have noted,
this statistic should help show that the flavoring does not provoke the myriad
symptoms that have been attributed to it. Few people claim to suffer what Kwok
dubbed “Chinese restaurant syndrome” when they pop open a bag of chips ... On
top of that, numerous high-quality studies of MSG have failed to demonstrate
significant symptoms, even in people who claim to suffer from MSG reactions. In
the 1990s, the FDA commissioned an independent review that found MSG only caused
adverse effects in a small minority of “sensitive individuals” who ate large
amounts on an empty stomach ... Instead, historians and researchers have blamed
the initial symptoms that Kwok and others attributed to MSG on a variety of
other sources: excess sodium or alcohol consumed with restaurant meals, a
version of the placebo effect, growing skepticism of corporations, and
deep-seated, anti-Asian prejudice"

Break glasses! Eating MSG
"healthy" Tan Dunci cooking is not taboo - ebc.net.tw, 12/12/16 -
"MSG refining is very pure, more than 99% are glutamic
acid, basically do not have to worry about other compounds will affect the
health of the human body. In addition, glutamate in addition to the synthesis of
human essential proteins, but also the central nervous system as a
neurotransmitter, moderate intake of MSG is healthy; the contrary, although the
rumors about MSG harmful to health, so far scientists can not prove that MSG
will hinder health"

l-glutamate in soup reduces subsequent energy intake from high-fat savoury food
in overweight and obese women - Br J Nutr. 2015 Oct 12:1-9 -
"The soup with MSG in comparison with the control soup
resulted in significantly lower consumption of energy at lunch. The addition of
MSG in the soup also reduced energy intake from high-fat savoury foods" -

Monosodium
glutamate intake is inversely related to the risk of hyperglycemia - Clin
Nutr. 2013 Nov 1 - "We followed 1056 healthy adults aged
20 years and older from 2002 to 2007. Dietary data were collected during home
visits using a 3-day food record and a food frequency questionnaire ... The
highest quartile of MSG intake was associated with a lower risk of incident
hyperglycemia, even after adjustment for a number of covariates, including
dietary patterns. Comparing the highest with the lowest quartiles of MSG intake,
the odds ratio (OR) for hyperglycemia was 0.30 (95% CI 0.13-0.66). There was a
linear inverse association between MSG intake and change in blood glucose"
