"Fads aside, research suggests more people are truly
getting sick from the gluten found in wheat, rye and barley, but the reasons
aren't clear ... In the most serious cases, gluten triggers celiac disease. The
condition causes abdominal pain, bloating and intermittent diarrhea. Those with
the ailment don't absorb nutrients well and can suffer weight loss, fatigue,
rashes and other problems ... It was once considered extremely rare in the U.S.
But about 20 years ago, a few scientists began exploring why celiac disease was
less common here than in Europe and other countries. They concluded that it
wasn't less common here; it was just under-diagnosed ... there may be more
celiac disease today because people eat more processed wheat products like
pastas and baked goods than in decades past, and those items use types of wheat
that have a higher gluten content ... Volunteers who had symptoms were put on a
gluten-free diet or a regular diet for six weeks, and they weren't told which
one. Those who didn't eat gluten had fewer problems with bloating, tiredness and
irregular bowel movements" - See

intestinal epithelial cells via the inhibition of cPLA(2) - Clin Nutr. 2011
Mar 19 - "arachidonic acid (AA) ... Docosahexaenoic acid
(DHA) is a long chain polyunsaturated fatty acid that counteracts many of the
proinflammatory effect of AA ... The exposure of those cells to PT-gl alone
resulted in an increased AA release, cycloxygenase-2 expression, cPLA(2)
activity and prostaglandin E(2) and interleukin-8 release in culture medium,
whereas the simultaneous exposure of the cells to DHA and PT-gl prevented the
above-mentioned increases ... These results suggest that intestinal epithelial
cells sustain the celiac inflammation, releasing AA when stimulated with gliadin
and that DHA inhibits the AA release by these cells" - See

- Science Daily, 7/22/10 - "Children with celiac
disease need to include certain must-have vitamins in their diets to stave
off weak bones and osteoporosis ... A study of 43 children and teens from
three to 18 years of age diagnosed with celiac disease showed that they also
tended to have low bone density, likely due to poor intake and absorption of
vitamins and minerals. That means they should be getting more of
bone-boosting vitamins such as K and D in their diets"

example of a malabsorption syndrome conferring increased risk for various
deficiency states, including folate and vitamin B12 ... patients with celiac
disease and using vitamin supplements had higher serum vitamin B6 (P =
0.003), folate (P < 0.001), and vitamin B12 (P = 0.012) levels than patients
who did not or healthy controls (P = 0.035, P < 0.001, P = 0.007, for
vitamin B6, folate, and vitamin B12, respectively). Lower plasma
homocysteine levels were found in patients using vitamin supplements than in
patients who did not (P = 0.001) or healthy controls (P = 0.003). However,
vitamin B6 and folate, not vitamin B12, were significantly and independently
associated with homocysteine levels"
